CANCATO OF HAKE WITH CHILEAN POTATOES, CHORIZO SAUSAGE AND CHEESE SAUCE
Filet of hake stuffed with onion and tomato confit, served with chilean potatoes and chorizo sausage, all bathed in chanco cheese sauce / Native potato gnocchi with mussels in tomato sauce, salmon caviar and grana padano cheese.
TOPINAMBUR CREAM WITH TRUFFLES.
